Cows were first brought to Argentina in 1536 by Spanish Conquistadors. Due to the geography of the Pampas and the small national market, the cattle multiplied rapidly.

Railway building within the Pampas and the invention of refrigerated trains and ships in the late 19th century, made Argentina's beef export industry thrive. The differing seasons between the Northern and Southern Hemispheres meant that Argentine beef came onto the market at a time of year when beef was less available in the Northern Hemisphere, which further lifted the potential export market in the United States and European countries.

Following the increasing demand for high quality beef, new breeds and selective crossbreeding have been developed. The country is currently the third largest beef exporter in the world after Brazil and Australia.

Beef and its related activities have played a major role in the life of Argentines. From the tradition of the "asado" (BBQ) or the "yerra" (cattle branding) to the stories of the "gauchos", much like American cowboys, beef is not only one of their main meals but also a part of their culinary and historical culture.
